Vitamin C smoothie

I've been feeling a bit sniffly these days - one day it feels like summer and the next we're back to winter! - so this cure-all smoothie has been my go-to. It's so simple to make and each glass packs some serious immune support with about 400% of your daily recommended vitamin C. Plus it tastes absolutely delicious! Here's the recipe:

1 cup of freshly squeezed organic orange juice

1/2 cup of frozen pineapple

Big handful of raw organic kale

Add all ingredients to a blender. Blend until smooth and enjoy!

I like to buy a pineapple, cut it up, and freeze it ahead of time so it's ready to go anytime I need to make a smoothie. Using frozen fruit also eliminates the need to add ice and (I think) produces a smoother, thicker texture. In addition to lots of Vitamin C, this smoothie also provides your daily doses of vitamin A and potassium. Since it doesn't have any protein and because pineapple and orange juice are a bit acidic, I would recommend it as an addition to your usual breakfast or as midmorning snack. Either way, it's my favorite vitamin booster that never fails to make me feel better!
